TOWN
restaurant, 9th & Waialae, serves fresh, award-winning cuisine
that is "Local First, Organic Whenever Possible, with Aloha
Always."
Chef/owner Ed Kenney describes his popular Kaimuki eatery as a
socially and environmentally responsible business. TOWN is
committed to local farmers, fishers, and ranchers and favor
those who practice sustainable methods. They use earth-friendly
cleaning products, recycled paper and packaging, and all used
cooking oil goes to produce biodiesel fuel.
TOWN is the first commercial location on Oahu to operate a
worm composting facility to recycle the nutrients from kitchen
waste. With space a premium, a 16" wide by 16" deep
by 16' long wooden bin was designed to fit a narrow walkway between
two buildings. Eight-foot modules will be added as the worm colony
grows out.
TOWN maintains an on-site herb garden to harvest fresh
ingredients as needed, which is nourished by rich vermicast courtesy
of their own worms.

Peterson's Upland Farm in beautiful Wahiawa
has been producing island fresh eggs for generations and selling
chicken manure to farmers and gardeners. Their 10,000 hens produce
a veritable mountain of manure that has
been nibbled at by a small population of Indian blueworms long established
on the property.
Waikiki Worm Company is currently managing and expanding the
worm colony to process this material with the goal of eliminating
standing manure. Worms-at-work also control flies and other
vectors, odor, and pollution due to runoff.
By converting chicken manure to vermicompost, the Petersons will
be able to offer a superior, nutrient-stable fertilizer product
that is sweet-smelling and will not burn plants.
